On the farms located in the identified areas and at the Cantine Settesoli winemaking facilities, protocols have been adopted to give efficiency, sustainability and typicality to the product, through careful analysis of the soil/grapevine relationship. This is because the characteristics of the calcareous soil are mirrored in those of the roots, to understand the role of the soil in influencing the development and efficiency of the root system.
Other activities that were useful in understanding the qualitative result of the wines obtained were the monitoring of soil humidity and the water status of the plant, the identification of the best grafting combinations for the different types of calcareous soil, the preservation of the physical and dynamic properties of the soils through the conservation of organic substance, the microbial community, and structural properties. From an oenological point of view, new techniques have been introduced for extracting and clarifying musts, managing alcoholic fermentation with selected yeasts, maceration and fermentation of red wines, controlled maceration and pumping over to maintain the quality of wines and improve the aromatic, taste and visual components thanks to the technique of maturation 'sur lies' for long periods.
